Ingredients

3 tablespoons extra virgin olive oil

2 tablespoons red wine vinegar

1 teaspoon chopped fresh oregano

1 1/2 pounds cucumbers, peeled, seeded, and sliced

1 cup grape tomatoes, halved

1/2 cup thinly sliced red onion

2 tablespoons fresh mint leaves

2 tablespoons fresh flat-leaf parsley leaves

2 tablespoons chopped fresh dillweed

Kosher salt and freshly ground black pepper

1/2 cup crumbled feta cheese


Preparation

Whisk together first 3 ingredients in a small bowl. Toss together cucumbers, next 5 ingredients, and vinegar mixture in a large bowl. Season with salt and pepper. Sprinkle with feta.
