
From Rachel: I made this frittata yesterday. You can pretty much use whatever veg you have leftover in the fridge.
Put some parchment paper in the bottom of your dish, I spread spinach in the bottom then topped with some mushroom, grated zucchini, carrot, tomatoes and torn basil leaves. Then beat about 10 or 12 eggs (I made a huge one) , add some salt and pepper and pour that over the top and bake for about 20 ish mins. Then top with goats cheese and bake for another 5 mins or so. An easy breakfast or lunch option ready to go in the fridge for the next few days.
